1 pound Italian sausage
1 large onion, sliced
1 green pepper, sliced
2 cloves garlic, chopped
1 tablespoon olive oil
3 cups frozen spinach

- Slice sausage the long way or cut in chunks and cook in skillet with olive oil until it begins to brown.
- Add onions, pepper, and garlic to pan and cook until onions begin to brown.
- Stir in frozen spinach; cook 5 minutes.
- Serve over pasta or rice. Serves 2-3.
